Ingredients :

Yogurt ‘1 cup and add the juice of one lemon.

Gram flour (besan) 3 tbsp

Cauliflower 1/2kg cut into florets

Carrots 2 chopped

Spring onions 2

Green peas 1 cup shelled

Green beans 1/2 cup (whatever kind available)

Potatoes 2 medium

Green chilies 6

Fresh coriander 1 bunch finely chopped

Curry Patta 6

Red chilies 1/2 tbsp, powdered

Turmeric 1 tsp

Ginger/ garlic paste 1 tbsp

White vinegar 2 tbsp

Salt to taste

For Baghar: 


Red chilies 8 whole

Fenugreek seeds 6

Coriander seeds 1 tsp, roasted

Cumin seeds 1 tsp

 Curry Patta 6

Garlic cloves 3

Oil 1 cup



Method :

Blend gram flour and yogurt thoroughly and strain into a large pan. Add ginger/ garlic paste, red chili powder and turmeric and heat Spread 8. little oil on the top edge of pan to prevent karhi from boiling over. Bring to a boil stirring continuously and add curry palm, green chili and vinegar. Add salt and all vegetables. Cook until vegetables are tender and karhi.
