| Kofta With Saag |
Ingredients For Koftay:
Beef mince, lean 1/2 kg
Roasted gram (chum) 2 tbsp
Cloves 4
Black peppercorns 8
Cumin seeds 1 tsp
Khush Khush 1 tbsp
Black cumin seeds 1 tsp
White bread 2 slices, make crumbs
Onions 2 medium, finely ChOPPEd
Fresh coriander and mint 1 bunch each, finely chopped
Green chilies 3, finely chopped
Ginger ‘/2 tbsp, finely chopped
For curry:
Spinach 1/2 kg, finely chopped
Methi, small leaves few leaves, finely chopped
Fresh dill 2 bunches, Finely Chopped.
Wash and soak the greens in water with a pinch of turmeric for 1/2 hour.
Onions 2 medium, finely sliced
Red chilies 1 tbsp, powdered
Turmeric 1 tsp
Garam masala 1 tsp, POWdered
Ginger/ garlic paste 1 tbsp
Butter 1 tbSp
Oil 1 cup
Salt to taste
Method:
Mix bread crumbs with mince. Grind all dry ingredients for koftay, mix in the mince and grind. Add onions, green chilies, mint, and fresh coriander to ground mince and make small koftay Heat a little oil in a frying pan and fry the koftay. Remove to a dish Wash the soaked greens and put in a pan over medium heat and cook. Remove when the water dries and puree in a blender In a separate pan heat oil and fry onions till golden brown, remove spread on absorbent kätchen paper. Crush onions with hands, Put all spices and onions back in the same pan and stir fry Add saag, whole green chili,
