Ingredients :
Mince beef or mutton 1Kg
Onions 3 Medium, slice fine, fry in oil until golden brown and spread on kitchen
Yogurt 1 Cup
Ginger/garlic paste 1 tbsp
Black peppercorn 6
Cloves 4
Almonds 10 roasted
Poppy seeds 1 tbsp
Red chilies 1 tbsp powdered
Cumin seeds 1 tsp
Black cumin seeds 1 tsp
Cardamom 8
Grams (chana) 2tbsp, roasted and peeled
Mint 1 bunch
Green chilies 3, finely chopped
Papaya raw 2 tbsp, chop and grind with peel
Lemons 4
Oil 1 cup
Method :
Grind all dry ingredients very fine. In a pan combine the mince thoroughly with dry ingredients, yogurt, ginger, garlic, green chilies, mint, raw papaya, and oil, add lemon juice and leave for 15 minutes. Put the pan with mince on low heat and cook till water in the mince dries. Heat a piece of coal on flame till it becomes red hot. Put the coal on a piece of onion peel in the pan on the top of mince, pour a tbsp of oil on coal and immediately cover the pan tightly for a few minutes. Put the pan with mince on a tawa, turn up the heat to high for 5 mins then turn it down. Mince is ready when it turns brown. Sprinkle with onions, mint and green pepper and serve it with naan.
